Soba-rific!

With Summer just creeping around the corner, I've been hankering for cold salads and noodles. So I took to this Japanese Soba Buckwheat Noodle dish with Tamari Dipping Sauce. Easy breezy, and perfect for the season!Why Buckwheat?Loaded with Vitamins B1 & B2, bioflavanoids, minerals (like iron which strengthens your immunity), and more protein than rice, Buckwheat lowers cholesterol and blood pressure, strengthens capillaries, fights free radicals (as it contains Rutin- a kind of antioxidant), and reduces fat accumulation due to its high fiber content. Plus, you won't get that heavy, sinking feeling like you would after eating pasta since Buckwheat is a gluten-free, wheat-free whole grain.

What you'll need: Buckwheat Noodles (1 wrapped bunch=1 serving), first boil, then run under cold water 3 tablespoons shaved Daikon Radish 2 tablespoons minced scallions Strips of Nori for garnish

For the dipping sauce: 1/2 cup tamari or shoyu 1/4 cup water 1 teaspoon agave nectar or brown sugar 1/2 teaspoon rice vinegar

Put it all together, and there you have it. A perfectly healthy, summery dish.
